Green Peppers: are harvested before they are fully ripe. If they are left they will first turn yellow and then red. They have a slightly bitter flavour.

Yellow Peppers: are more mature than green peppers. They have a fruity taste.

Red Peppers: are more mature than green and yellow peppers. They have a sweet taste.
